Theses are such a great afternoon snack and go even better with a cup of tea. They are super simple and taste amazing defiantly worth a try, vegan or not.
Prep time: 15 mins
Cook time: 15 – 20 mins
Portions: 12 Muffins
Ingredients
- 60g Dairy Free/ Vegan spread of your choice
- 100g Natural Peanut butter
- 75ml Honey
- 150 Self Raising Flour
- 1 Tsp Baking Powder
- 60g Oats
- 4 Tbsp Almond Milk/ Dairy alternative
- 3 Ripe Bananas
- Handful of chopped hazelnuts
Method
- First you need to preheat your oven to 180c/Gas Mark 4 and prepare your muffin tin ready to go
- Now it’s time to mash your bananas and put to one side
- Beat together your vegan spread, peanut butter and honey until light and fluffy in a large bowl . I would recommend you use a whisk to do this rather than a wooden spoon as it will help create air. Or if you are lucky to have a food mixer/electric whisk use that
- Now your mixture is light and fluffy it’s time to fold in your flour, baking powder and oats and mix
- Once the flour is combined you can now stir in your mashed bananas and chopping hazelnuts
- Now divide the mixture equally into the muffin cases, an ice cream scoop is great for this or a heaped tablespoon
- Now bake for 15- 20 mins until golden brown and risen, then enjoy
