With many of us trying to eat more vegetables and less meat this veggie curry is a great way to do it. Packed full off goodness and flavour and super simple this dish makes a great addition to your weekly plan. And don’t forget you can always add your favourite veggies to make it personal to you.

Ingredients
- 1 Onion
- 2 Cloves of Garlic
- Ginger (Small thumb size piece)
- 1 Pepper
- 1 Courgette
- 1 large carrot / 2 small
- A large handful of Mushrooms
- Half a Cauliflower
- 1/4 Butternut squash
- 400 – 500 ml Coconut milk
- 2 Tsp Cornflour
- 2 Tsp Mild Curry Powder
- 1 Tsp Garam masala
- 1 Tsp Turmeric
- 1 Tsp Cumin
- 1 Tsp Coriander
- 1 Tsp Smoked Paprika
Method
- First thing you will need to do is preheat your oven and put a large pan with a small amount of oil in ready to heat up
- So grab your cauliflower and butternut squash and cut into large chucks then put into a baking tray and drizzle with oil and sprinkle with curry powder, garam masala and turmeric (this is separate to the spices in the ingredient list, you can put as much or as little spice as you like) then bake for 15 – 20 mins until they start to caramelise
- Whiles your cauliflower and butternut squash are roasting prepare the rest of your veggies by finally chopping your onion and ginger, crush your garlic and chop the rest of your veggies in to medium – large chucks so they are ready to go
- Now your pan should be heated up add your onions, garlic and ginger and cook until they become translucent, this should take about 5 – 10 mins
- Once they are cooked add your spices and cook them out, this will help to enhance the flavour
- Now add the rest of your veggies and cook off for about 5 mins in the spices, by now your cauliflower and butternut squash in the oven should also be ready so add them now and mix well
- Now add your coconut milk and mix your corn flour with a small amount of water then add this and mix well
- Now everything is in the pan let it simmer for about 20 – 30 mins
- Then season to taste with salt and pepper then serve with rice and enjoy !
