This is an absolute classic, everyone does it slightly different but it still taste amazing. If you have never made your own before you have to try this simple but delicious recipe for a Spanish treat, and don’t forget you can always add your own spin on it.

Prep Time: 1 Hour

Cook Time: 1 – 2 Hours

Portions: 6 – 8 People


  • Paella Rice Approximately 500g
  • 1 Onion
  • 2 Garlic Cloves
  • 1 Pepper
  • Chorizo
  • 1 Can of Tomatoes
  • 2 Litres of Chicken Stock with 2 Tsp Turmeric and 1 Tsp Smoked Paprika
  • Chicken thighs
  • Sea Food of your choice


  1. First thing you will need to do is cook your chicken. Take a large sauce pan and fill with water and add your chicken thighs and cook until cooked all the way through (this will take approximately 30 – 40 mins). We boil the chicken as it not only will make the chicken tender and super juicy but the water will make a fantastic chicken stock that you can cook your Paella in
  2. Now your chicken is cooked put it to one side and it’s time to create your Paella. If you are lucky to have a Paella dish get that out or you can use a large sauce pan either will work. Take your pan and put it on a medium heat to warm up
  3. Whiles this is happening you can prepare your ingredients. So take your onion and finally dice it, crush and chop your garlic finely and cut your peppers into small to medium dices. Now take your chorizo and cut in to chunks (do as much as you like, you have to eat it after all)
  4. By now your pan should have warmed up so take a small amount of oil and put in your pan then add your onion, garlic and chorizo and cook off until the onions become translucent then add your peppers and cook for a further 5 mins
  5. Now it’s time to add your rice and mix it through the onion mix so it is coated in the oil you cooked your onion and garlic in. Now the rice is coated add about a litre of your stock and can of tomatoes and let this simmer
  6. Now your paella is simmering you will need to continue to add the rest of your stock until the rice looks completely cooked, this should take about 20 – 30 mins
  7. When your rice is nearly cooked it is time to add your sea food (this can be whatever you want and can get your hands on so go mad) then let this simmer until completely cooked. This is when you could also add peas and sweetcorn if you like, I know it’s not very traditional but it taste great, but you do what you like
  8. Now your rice and fish is cooked add your chicken back in and cover your Paella with foil or a clean tea towel then turn the heat off and let this rest for about 20 mins. This will help create more flavour and taste even better
  9. Now it is done uncover and enjoy !
