Carrot and Apple Muffins

If you are looking for a healthy snack I have you covered. Theses super healthy and tasty muffins don’t just taste amazing but have 2 of your 5 a day, so what’s not to like.

Prep Time: 15 – 20 mins

Cook Time: 25 – 30 mins

Portions: 12 Muffins

Ingredients

  • 1 Cup of Ground Almonds
  • 2 Cups of Oats
  • 1/2 a Cup of Wholemeal/ Brown Flour
  • 1 Tsp Baking Powder
  • 1 Tsp Salt
  • 1/2 Cup of Honey
  • 3 Eggs
  • 1/4 Cup of Butter/ Coconut Oil
  • 1 Cup / 2 Apples Grated
  • 1 Cup / 1 Large /2 Medium Carrots Grated

Method

  1. First you need to preheat your oven to 180c/ 350 F and prepare your muffin tin by lining them with any cases you like
  2. Now get all your dry ingredients and mix together
  3. In a separate bowl combine your honey, eggs and butter/oil together and mix well. Once you have done this add your grated carrot and apple and again mix together
  4. Now you have two bowls pour your wet ingredients into your dry and you guessed it combine together
  5. Now place the mixture into your muffin cases as equally as you can (about a large tablespoon)
  6. Now cook them for approximately 25 mins or until a knife comes out clean
  7. Then enjoy !
