Biscoff Cookies

These are going to be some of the most delicious cookies you have probably ever had. They may not be very healthy but I think we are all allowed a treat, especially when they taste this good. so have one or two and don’t feel guilty about it.

Prep Time: 1 hour 20 mins

Cook Time:12-14 mins

Portions: 15 Cookies (Give or take)


  • 15 Large Tsp of Biscoff Spread
  • 115g Butter (Salted or unsalted whatever you have will work)
  • 175g Brown sugar (either light or dark will work)
  • 1 Egg
  • 235g Plain Flour
  • 40g Cocoa Powder
  • 1/2 Tsp Bicarbonate of Soda
  • 1 bar of White Chocolate chopped into chunks


  1. First you need to create the centre of your cookie that will melt once they are baked. So take a large baking tray and scope out about 15 large tsp’s of Biscoff spread onto a tray or plate and put in the freezer for about an hour till they become firm
  2. Now an hour has passed you can start to create your dough. But first preheat your oven to 180c / 350F and line your baking trays with grease proof paper ready for later
  3. Now take your butter and sugar and beat until light and fluffy. You can do this in a food mixture or by hand both will work fine. Then add your eggs and beat again till it becomes a smooth mixture
  4. In a separate bowl mix together your dry ingredients including your chocolate then add this to your butter mix and combine together until a dough forms
  5. Ok, now the fun part take your frozen Biscoff spread and encase it with your dough so you can’t see any of the spread then place on your baking tray, then continue this process until you have your 15 cookies
  6. Now time to bake this should take about 12 mins. Don’t forget when they cool they will continue too cook so don’t worry if they are slightly soft still
  7. Then time to enjoy !!!
