Chocolate and Orange Muffins with Orange Buttercream

If you are starting to get into the Halloween mood why not give theses a go. Easy and delicious what’s not to like.

Prep time: 10 mins

Cook Time: 20 -25 mins

Portions: 8 – 10 muffins depending on size

Ingredients

  • 150g Butter
  • 150g Sugar
  • 3 Eggs
  • 120g Self Raising Flour
  • 30g Cocoa Powder
  • 1 Tsp Baking Powder
  • The Zest of 1 Orange
  • The Juice of 1 Orange
  • For icing 140g Butter
  • For icing 280g Icing Sugar
  • The Juice on 1 Orange

Method

  1. First preheat your oven to 180c and prepare your muffin tin with cases of your choice
  2. In a large bowl cream together your sugar and butter until it becomes light a fluffy this will take a good few minutes
  3. Then slowly add the eggs a bit at the time to ensure you don’t split the mix, if the mix does start to split add a table spoon of flour, this should help
  4. In a separate bowl mix your dry ingredients together then fold into your butter mix then finally add your orange zest and juice
  5. Now your mixture is ready you can divide it equally between your cases then cook for 20 – 25mins until a knife comes out clean
  6. Now your muffins are cooked let them cool whiles you make your icing
  7. This is super easy, take your butter and beat it until it becomes light in colour then add your icing sugar and beat again until it becomes light and fluffy. Then add your orange juice a bit at a time and remember to taste as you go along. And that’s it your icing is done
  8. By now your muffins should be cooled and ready to ice. So ice in anyway you like then top what what you like. Then enjoy!
