Pear and Hazelnut Cake

If you are looking to try something a little bit different you need to give this a go. The tasty pear with the crunch of the hazelnut make a great combination.

Prep Time: 15mins

Cook Time: 30 – 40 mins

Portions :8 – 10 slices


  • 4 Eggs
  • 220g Light Brown Sugar
  • 200ml Sunflower Oil
  • 200g Plain Flour
  • 50g Cocoa Powder
  • 1 Tsp Baking Powder
  • 4 Pear Peeled and Chopped in to small chucks
  • 150g Chopped Hazelnuts
  • 125g Full Fat Cream Cheese
  • 125g Butter
  • 250g Icing Sugar
  • 2 Tsp Maple Syrup


  1. First you need to prepare your cake tins and pre heat your oven to 180c/Gas Mark 4
  2. First take your sugar, eggs and oil a bowl and whisk together until it is smooth
  3. In a separate bowl sift together your flour, cocoa powder and baking powder
  4. Now fold your flour into your egg mix being careful not to knock the air out, then finally mix in your pear and hazelnut chunks
  5. Now bake this for 30 mins until a knife come out clean
  6. Whiles this is baking you can make your icing. Start by beating your butter until it becomes light in colour then add your cream cheese and beat again until smooth. Now you can add you icing sugar a bit at a time until it forms a smooth mix then finally add your maple syrup
  7. By now your cake should be cooked and out the oven. Be sure to wait until your cakes are completely cool before you ice them. You can do this however you like so get creative, then enjoy with a cup of tea
