Chocolate Oreo Cookies

Can you ever have too many cookie recipes, I think not. So I have another one for you. A fantastic chocolate cookie with chunks of Oreo, so what’s not to like, give them a go.

Prep Time:45 mins

Cook Time: 10 – 15mins

Portions: 18 Cookies

  • 125g Unsalted Butter
  • 100g Brown sugar (Light or Dark both work well)
  • 100g Caster Sugar
  • 1 Egg
  • 1 tsp Vanilla
  • 25 g Cocoa Powder
  • 225g Plain Flour
  • 1/2 tsp Baking Powder
  • 1/2 tsp Bicarbonate of Soda
  • 1 Packet of Oreos chopped into large chunks
  1. Once you have your ingredients weighed out ready you can then prepare your baking trays by lining them with grease prof paper to stop your cookies from sticking. You don’t need to pre heat your oven quite yet as we are going to rest our dough in the fridge before we cook it as I fine it helps them bake better
  2. Ok now your ready, lets go. First take your butter and both your sugars and beat together until they become light an fluffy. This will take a little while if you are doing it by hand so I would recommend using an electric mixture if you have one, but don’t worry if not they will still turn out great
  3. Now your mixture is light and fluffy add your egg and vanilla and beat until all combined
  4. In a separate bowl combine all your dry ingredients together (Flour, cocoa powder, baking powder and bicarbonate of soda)
  5. Now add your dry ingredient into the butter mix until combined then add in Oreo chunks and combine again
  6. By now your mixture should have come together to form a ball. It’s now time to put your dough in the fridge to firm up slightly, this should take about 30 mins. Now your dough is in the fridge you can pre heat your oven to 180c/ 375 F/ Gas Mark 4
  7. Ok, now 30 mins have passed it’s time to shape your cookies. So take a golf ball size chunk of dough and roll into a circle then place on your tray and slightly flatter then repeat this until you are out of dough
  8. Now bake for 10 – 12mins until they are slight firm to touch then let them cool (or not) then enjoy!
