If you love banoffee pie then you will love these cupcakes. The same great taste but in a cupcake so what’s not to like.
Prep Time: 15mins
Cook Time: Approximately 12 – 15 mins
Portions: 12 Cupcakes
Ingredients
- 125g Butter
- 125g Sugar
- 2 Eggs
- 125g Self Raising Flour
- 1 Tsp Baking Powder
- 2 Mashed Bananas
- 1 Can of Caramel
- 125g Butter
- 250g Icing Sugar
- 2 TBSP Caramel
Method
- First you will need to preheat your oven to 180c/ Gas Mark 4 and get your cup cake tray ready
- Now you can start your cake batter. First beat together your butter and sugar until it becomes light and fluffy then slowly add your eggs a bit at a time.
- In a separate bowl mix your flour and baking powder together then fold the flour into the sugar mix then stir in your mashed banana
- You can now fill your cup cake cases. So fill each of your cases half way then add a about a teaspoon of your caramel in the middle then top with more cake mix
- You can now bake them for approximately 12 – 15 mins until they are golden brown and a knife comes out clean
- When your cakes are baking you can now make your icing so take your butter and icing sugar and beat together until it is light and fluffy then add two tablespoons of caramel and beat further
- By now your cake should be ready, so let them cool completely then ice them in anyway you like and finally drizzle with more caramel to make then even more tasty
