It doesn’t get much more Christmassy then After Eights so why not put them in a Chocolate muffin!

Cook Time: 20 -25 mins
Portions: 8 – 10 muffins depending on size
Ingredients
- 150g Butter
- 150g Sugar
- 3 Eggs
- 120g Self Raising Flour
- 30g Cocoa Powder
- 1 Tsp Baking Powder
- 1 Box of After Eights (You won’t need them all so enjoy a snack)
- 140g Butter
- 280g Icing Sugar
- Green Food Colouring
Method
- First preheat your oven to 180c and prepare your muffin tin with cases of your choice
- In a large bowl cream together your sugar and butter until it becomes light a fluffy this will take a good few minutes
- Then slowly add the eggs a bit at the time to ensure you don’t split the mix, if the mix does start to split add a table spoon of flour, this should help
- In a separate bowl mix your dry ingredients together then fold into your butter mix
- Now chop up about 7-10 After Eights into small piece and mix into your batter
- Now your mixture is ready you can divide it equally between your cases then cook for 20 – 25mins until a knife comes out clean
- Now your muffins are cooked let them cool whiles you make your icing
- This is super easy, take your butter and beat it until it becomes light in colour then add your icing sugar and beat again until it becomes light and fluffy. Then add a small amount of green food colouring a bit at a time until you get the colour you like
- By now your muffins should be cooled and ready to ice. So ice in anyway you like then top with a whole After Eight and enjoy!
