Ingredients
- 100ml Oil
- 350ml Coconut Milk ( you will use one whole can for the whole recipe so no waste)
- 4 Eggs
- 1 Tsp Vanilla
- 140g Light Brown Sugar
- 140g Caster Sugar
- 250g Self Raising Flour
- 80g Desiccated Coconut
Icing
- 50ml Coconut milk (the rest of the can left from making your cake batter)
- 200g Icing Sugar
- More Desiccated Coconut to decorate

Method
- First you need to preheat your oven to 180c/Gas Mark 4 and get you tray lined with grease proof paper
- Now it’s time to make your batter, this is so easy. So take a large bowl and add all your cake ingredients together and mix well. Yep it’s that’s easy, anyone can do it
- Now put you cake in the oven and cook for 40 minutes until golden brown and a knife comes out clean
- Now you can leave your cake to cool completely and make your icing
- To make your icing take your left over coconut milk and add your icing sugar and mix well until smooth
- By now your cake should be cool so take your icing and spread your icing all over and sprinkle with desiccated coconut left to set then cut and enjoy!
