Lemon Drizzle Cake

In a few weeks it’s Mothers day so why not treat your Mum to a homemade lemon drizzle cake!! They are so refreshing and tasty, it sure will impress her or even just make one for yourself.

Prep Time: 10 Mins

Cook Time: 20 – 30 Mins

Portions: Approximately 10 Small Cakes/ Cupcakes

Ingredients

  • 150g Unsalted Butter
  • 150g Caster Sugar
  • 3 Eggs
  • 150g Self Rising Flour
  • 1 TSP Baking Powder
  • 1 – 3 TBSP Milk (Any of your choice)

Lemon Drizzle Topping

  • 2 Lemons
  • 80g Sugar

Equipment you will need:

  • Large Bowl
  • Kitchen Mixer/ Wooden Spoon
  • Grater
  • Knife
  • Cake Moulds/ Cupcake cases
  • Skewer

Methord

  1. First you will need to preheat your oven and prepare either your cake moulds or cupcake cases both will work great (I found some amazing roes shaped ones that work so well)
  2. Now in a large bowl or kitchen mixer beat together your butter and sugar until light and fluffy
  3. Now slowly add your eggs one at a time, you may need to add a spoon of flour at a time with each egg to stop the mix from splitting
  4. Now in a separate bowl mix together your flour and baking powder and fold this into your mix, being careful not to knock all the air out
  5. Now grate the zest of two lemons in your mix, give it one last mix and put into you moulds and bake for 20 – 30 Mins until golden brown or a knife comes out clean
  6. Whiles your cakes are cooking you can make your drizzle, so take 80g of sugar and mix with the juice of two lemons
  7. By now your cake should be cooked so let them cool slightly then use a skewer to make holes in all your cakes and pour you lemon drizzle mix over. Let them set and cool completely, then enjoy!
