Banoffee has to be one of my favourite combinations it is so tasty and delicious. This recipe is rich sweet and everything you want in a sweet treat. It does take a bit of time but it sure is worth it.
Prep Time: Approximately 1 hour
Cook Time: 25 Minutes (Shortbread Cooking Time)
Setting Time: 4+ Hours
Portions: 12 Squares
Ingredients
Shortbread
- 200g Butter
- 100g Caster Sugar
- 270g Plain Flour
- 2 Banannas
Caramel
- 200g Butter
- 50g Caster Sugar
- 1 Tin Condensed Milk
Topping
- 100g Dark Chocolate
Equipment you will need
- Square/Rectangle Baking Tin
- Grease Proof Paper
- Large Bowl and Spatula/ Wooden Spoon
- Sauce Pan
Method
- First you need to preheat your oven to 180c and line your baking tine with grease proof paper, DO NOT SKIP THIS STEP as it will be very difficult to get it out at the end
- Ok, now you can make your shortbread. So take your butter and sugar and cream together then add your flour and mix together until it forms a dough then press this into your tin and bake for 25 minutes until golden brown, then leave to cool
- You can now make your caramel. This is one of the easiest way to make it. So take your sauce pan and add in your butter, sugar and condensed milk and bring to the boil and let it simmer for about 10 mins until it becomes a deep caramel colour
- Whiles you caramel is simmering slice your bananas and lay over top of your shortbread in any pattern you like
- By now your caramel should be ready and you can now pour this over your shortbread and leave to set in the fridge
- You can now make your topping. All you need to do is melt your dark chocolate and pour on top of your caramel and put in the fridge to set completely, this will take at least 3 hour so be patient
- Before you cut it make sure it is completely set but then you can enjoy it!
