Mini Cookie Pies

If you love a cookie then you will love these cookie pies, especially as they are filled with Nutella. They take a bit of time but are so worth it.

Cook Time:15 – 20 Mins

Portions: 6 Mini Cookie Pies


  • 125g Unsalted Butter
  • 100g Soft Brown Sugar
  • 100g Caster Sugar
  • 1 Egg
  • 1 Tsp Vanilla
  • 250g Plain Flour
  • 1/2 Tsp Baking Powder
  • 1/2 Tsp Bicarbonate of Soda
  • Nutella/ Chocolate Spread

Equipment you will need

  • Large Bowl
  • Wooden Spoon/Spatula
  • Muffin tray


  1. First you need to weight all your ingredients and make sure you read the whole recipe before you start so you know what you are doing
  2. Now you are ready, you can get started. Take your butter and both sugars and beat together until it becomes light and fluffy, this will take a few minutes so I recommend you use an electric whisk
  3. You can now mix in your egg and vanilla
  4. Now your egg is completely mixed in you can now add in your flour, baking powder and bicarbonate of soda
  5. Now your cookie batter is done you can press this onto the sides and bottom of your muffin tin and then put in the freezer to set for 30 mins
  6. You can now add a large teaspoon of Nutella in the middle of your set dough and then put this back in the freezer to set, this will take another 30 mins
  7. Now take the remanding cookie dough and top your pies and put back in the freezer to set for another 30 mins, you can also now preheat your oven to 180C
  8. Ok, so your pies should now be set and are ready to cook for 20 – 30 Mins in the oven until golden brown
  9. You can now leave them to cool and then enjoy.
