With Christmas just around the corner why not treat everyone to another sweet treat.
Prep Time:10 Mins plus 30 mins in the fridge

Portions: 12 Cookies
Ingredients
- 125g Unsalted Butter
- 100g Soft Brown Sugar
- 100g Caster Sugar
- 1 Egg
- 1 Tsp Vanilla
- 250g Plain Flour
- 1/2 Tsp Baking Powder
- 1/2 Tsp Bicarbonate of Soda
- 1 Packet of Biscoff biscuits
Equipment you will need
- Large Bowl
- Wooden Spoon/Spatula
- Baking Tray
Method
- First you need to weight all your ingredients out and prepare a baking tray ready to go. Make sure you also read this whole recipe before you start so you know what you are doing
- Now you are ready, you can get started. Take your butter and both sugars and beat together until it becomes light and fluffy, this will take a few minutes so I recommend you use an electric whisk if you have one, don’t worry if not
- You can now mix in your egg and vanilla
- Now your egg is completely mixed in you can now add in your flour, baking powder and bicarbonate of soda and then add your biscuits
- Now your cookie batter is done you can leave it in the fridge for 30 mins. You can now also preheat your oven to 180c
- Ok, so 30 minutes have passed you can now shape your cookies into 12 even (as even as you can) balls and place them spaced out on your baking trays
- You can now bake them for 15 – 20 mins
- Now leave them to cool and enjoy
