Biscoff Crunch Cookies

With Christmas just around the corner why not treat everyone to another sweet treat.

Prep Time:10 Mins plus 30 mins in the fridge

Cook Time:15 – 20 Mins

Portions: 12 Cookies

Ingredients

  • 125g Unsalted Butter
  • 100g Soft Brown Sugar
  • 100g Caster Sugar
  • 1 Egg
  • 1 Tsp Vanilla
  • 250g Plain Flour
  • 1/2 Tsp Baking Powder
  • 1/2 Tsp Bicarbonate of Soda
  • 1 Packet of Biscoff biscuits

Equipment you will need

  • Large Bowl
  • Wooden Spoon/Spatula
  • Baking Tray

Method

  1. First you need to weight all your ingredients out and prepare a baking tray ready to go. Make sure you also read this whole recipe before you start so you know what you are doing
  2. Now you are ready, you can get started. Take your butter and both sugars and beat together until it becomes light and fluffy, this will take a few minutes so I recommend you use an electric whisk if you have one, don’t worry if not
  3. You can now mix in your egg and vanilla
  4. Now your egg is completely mixed in you can now add in your flour, baking powder and bicarbonate of soda and then add your biscuits
  5. Now your cookie batter is done you can leave it in the fridge for 30 mins. You can now also preheat your oven to 180c
  6. Ok, so 30 minutes have passed you can now shape your cookies into 12 even (as even as you can) balls and place them spaced out on your baking trays
  7. You can now bake them for 15 – 20 mins
  8. Now leave them to cool and enjoy
